Carrot, orange and ginger juice boost

Keep fighting fit with Bill Collison's winter champions: ginger, pomegranates and oranges

Spiced apple and ginger warmer


Serves 2

Ingredients
500ml apple juice
1 large thumb of fresh ginger, sliced
1 slice of lemon
1 star anise
2 cardamom pods , split open
1 stalk of lemon grass, trimmed and bruised

Method
1 heat all the ingredients together very gently in a small pan for 10 minutes, to let all the flavours infuse.
2 Allow to cool a little and then and this part makes all the difference pour through a strainer into the most beautiful glass you have.
3 Moroccan tea glasses are perfect. hold delicately and sip for instant soothing of the stylish variety.



Carrot, orange and ginger juice boost


Makes 2 tall glasses

Ingredients
1 large thumb of ginger
6 medium carrots, roughly chopped
juice of 4 oranges

Method
1 peel and chop the ginger as finely as possible.
2 Juice the carrots and ginger together ginger doesnt love juicing machines, but if youve chopped it finely, a good hit will make it through with the carrot juice.
3 Add the freshly squeezed orange juice, stir and serve.
