Chocolate Pudding in a Teacup


Baked dark chocolate pudding with Baileys & vanilla ice cream

This delicious show stopper of a pudd really will melt your lover’s heart or, if you are still in the courting stages, should help you seal the Valentine’s Day deal (so to speak). This is truly a Food for Food Lovers so warn your guests to come to the table wearing an elasticated waistband. This is not a pudding for dieters.


(serves 4)

400g dark chocolate

pistols (70%)

50g caster sugar

4 free range eggs

4 scoops ice cream

2 shots of Baileys

25g salted butter


1.Melt the chocolate in a bain marie (over a pan of simmering water). Add the butter, egg yolk and sugar.

2. Whisk your egg whites until soft peaks and add to the mix. Whisk to blend.

3. Separate into tea or coffee cups and bake for 8 mins at 200 degrees.

4.Serve with LOVE, plus ice cream, cherries and a drizzle of Baileys to taste. Yum!
