Ingredients

1kg floury potatoes

2 onions

3 cloves garlic, peeled and crushed

300ml chicken stock

Salt and pepper

Method

Heat the oven to 150C/Gas mark 3.

Peel and thinly slice the onions and potatoes. Peel and crush the garlic.

Layer the potatoes in an ovenproof dish with the onions and garlic, seasoning well as you do so.

Heat the stock and pour over the potatoes.

Bake in the oven covered for 90 minutes, followed by 30 minutes uncovered to brown the now tender potatoes.
